Sometimes, you just gotta have some ice cream.

 13 oz coconut milk (the canned kind - 1 can)
 13 oz coconunt milk - the carton kind from the dairy section near milk
 ½ cup maple syrup
 ¼ tsp cardamom, ground
 1 tsp vanilla extract
 1 tbsp Malibu Rum
 ½ cup finely shredded unsweetened coconut

blend all with a mixer/hand mixer until frothy and very well combined
refrigerate 6 hours
pour into ice cream maker and operate according to ice cream maker's directions
