Coconut Chocolate Macadamia Nut Cookies

These are actual cookies, like, turn around and the kids ate them all before you knew it good.

 1 egg
 ¼ cup coconut oil, melted
 3 tbsp raw honey
 1 tsp vanilla extract
 1 ¼ cups almond flour
 ¼ tsp baking soda
 ¼ tsp salt
 ½ cup unsweetened, shredded coconut
 ½ cup macadamia nuts, coarsely chopped
 ¼ cup chocolate nibs

Preheat oven to 350°F and line baking sheets with parchment paper.


Combine honey, coconut oil, egg, and vanilla in a small bowl.


In another bowl, mix coconut, nuts, flour, salt, baking soda, and chocolate nibs.


Form a well in the dry ingredients and pour in the honey mixture. Mix well.


Drop batter 2 inches apart on cookie sheet. Makes 20. Takes 2 cookie sheets.


Bake 9 minutes. Cool on pan 1 minute after removing from oven. Remove cookies to cooling rack to finish cooling.
